Courgettes with tomatoes and thyme
Serves 4
- 2 tbs olive oil
- 1 large onion sliced
- ½ tsp soft brown sugar
- 14 oz (400g) tin tomatoes drained
- ¼ garlic granules
- 1 tsp Thyme
- 4 medium courgettes sliced
- salt
- coarse black pepper
Heat the oil in a large pan. Add the onion and fry until softened. Add the sugar and fry for 2-3 minutes longer. Add the tomatoes, garlic granules and THYME and cook for 10-15 minutes until thickened. Add the courgettes and cook for another 5-10 minutes untill they are soft. Season with salt and pepper and serve.
