Minestrone soup

Serves 4-6

  • 1tbs olive oil
  • 1 medium onion-chopped
  • 2 sticks celery-chopped
  • 2oz (50g) unsmoked bacon derinded and chopped
  • 14oz (400g) tin chopped tomatoes
  • 1 large carrot-peeled and diced
  • 1 ½ pints (900ml) vegetable or chicken stock
  • 1 bay leaf
  • 1 tsp basil
  • ½ tsp oregano
  • ¼ rosemary
  • ¼ garlic granules
  • 2 tbs tomatoe puree
  • 1 oz (25g) spaghetti-broken into small pieces
  • grated parmesan cheese to serve

Heat the oil in a large saucepan. Gently fry the onion, celery, and bacon for 10 minutes, untill softened. Add the tomatoes, carrots, stock, herbs garlic granules and tomato puree. Bring to the boil. Cover and simmer for 40 minutes adding the spaghetti for the final 15 minutes. Serve sprinkled with parmesan cheese
