Stir-fried red cabbage with hazelnuts
Serves 4 (prep 25 mins)

100g hazelnuts

2tbsp sherry vinegar

2tbsp light brown sugar

2 tbsp light soy sauce
- 2tbsp medium sherry (optional)
- 2tbsp sunflower oil
- 1 red onion, finely sliced
- 400g red cabbage, finely shredded
- salt and freshly ground black pepper
- 100g sultanas or raisins
1.preheat the oven to 180c/gas mark 4.spread out the nuts on a baking tray and cook in the oven for 10 to 12 minutes until golden. Rub with kitchen paper to remove the skins.
2.while the nuts are cooking mix together the sherry vinegar, brown sugar ,soy sauce and sherry (if using) and set aside.
3.heat the oil in a non-stick wok or deep frying pan and stir-fry the red onion for 2 minutes. Add the cabbage, season, then, stir-fry for another 5 to 6 minutes.
4.stir the vinegar mixture to dissolve the sugar, then add to the pan with the nuts sultanas or raisins. Stir-fry for 1 minute. Serve immediately.
